This recipe is for a blender full of fun. It's my creation, and if I could copyright it, I would. It's not your typical frozen "girlie" drink, so imbibe with caution.
Shots = 1 ounce
2 shots golden rum (Trader Vic's, Rhum Barbancourt, Kahana Bay, etc.)
2 shots dark Jamaican rum (Myers's is good)
2 shots macadamia nut liqueur*
2 shots orange curacao or other orange liqueur like Gran Marnier
juice of 1 cara-cara orange
juice of 1 to 2 limes (depending on tartness desired)
unsweetened pineapple juice
approx. 2 tablespoons mango-pineapple jam or preserves, pineapple syrup or other sweet tropical goo
ice
Directions: put everything but the pineapple juice and ice in the blender first. Add enough pineapple juice to fill blender container to about 1/2 to 3/4 full (it won't take too much, maybe a cup or so, maybe less). Add ice to fill, then blend until it's smooth and frothy. Pour into your favorite martiki glass or tiki mug, garnish with a twist of lime, a cherry, a sprig of pineapple or whatever your heart desires. Add a small paper umbrella and enjoy.
*Since macadamia liqueur is not so easy to find, you may sub Amaretto, but the flavor won't be the same. If you're using Amaretto, start with only one shot until you taste it. Add more if you wish.
